Pickling Spice Mix
Ingredients
Pickling spice:
2 tablespoons black peppercorns
2 tablespoons mustard seeds
2 tablespoons coriander seeds
1 tablespoon allspice berries
½ teaspoon crushed red pepper flakes
1 tablespoon crumbled bay leaves (about 10 to 12)
Optional Ingredients:
2 tablespoons dill seeds (for dill pickles)
8 whole cloves
1 cinnamon stick (broken into pieces)
1 tsp dried ginger
1 to 2 star anise
1 tablespoon fennel seed

Pickled Eggs
12 hard-boiled eggs, peeled
1 large empty sterilized glass jar
4 cups vinegar
1 teaspoon salt
2 medium onions, chopped
1⁄3 cup sugar
1 tablespoon pickling spices
Put the peeled hardboiled eggs in the large jar.
Boil the remaining ingredients together for 5 minutes.
Pour over the eggs in the jar.
Cover; leave on counter overnight.
Keeps in refrigerator for weeks, in theory.

Notes
I found with the above pickled eggs recipe I can use it to make 24 pickled eggs when reusing glass jars (such as pasta sauce jars) that hold 6 eggs each with sliced beets. If using a larger jar then it might be best to make a batch with 12 instead.
I have used a premix myself having limited access to the ingredients on hand.
I used "Spice Time Pickling Spice"
Contains coriander seeds, mustard seeds, whole dill seeds, cut bay leaves, whole red chilies and whole allspice.
Results were great and also body cleansing as well.
